FOOD and FIXIN'S Recipes For the Busy Homemaker Here are three delicious hospi- tality cookies. The butter in the Yule Logs and Canadian Palettes makes them smell good when bak- ing and taste good when eaten. They' are a real Christmas treat. Yule Logs 3/4 cup butter 1/3 cup sugar' 2 tablespoons water b to 1 teaspoon almond ex- tract 2 cups sifted, all-purpose flour 1 egg white, slightly beaten 1/2 cup finely chopped, blanch- ed almonds. Cream butter, add sugar and cream well together. Stir in wa- ter and almond extract. Add flour gradually and combine thoroughly. Divide dough into eight equal por- tions. On an unfloured board, roll each piece into an 8 -inch roll about the thickness of a finger, then cut into 2 -inch lengths. Brush rolls with slightly beaten egg white, then roll in chopped nuts. Canadian Palettes V2 cup butter V2 cup butter 1 egg / to sia teaspoon grated lemon rind 11 cups sifted all-purpose flour 1 teaspoon baking powder 1.,2 teaspoon salt 1 cup finely chopped, blanch- ed almonds 1 egg white, slightly beaten Colored sugar or small "shot" candies. Cream butter, add sugar and cream well together. Add egg and lemon rind, then combine thor- oughly. Sift together flour, baking powder and salt, then stir in al- monds. Add gradually to creamed mixture and combine thoroughly. Roll out on lightly floured board to about ',s -inch thickness, Cut in- to rounds with floured 2 or 21/2 - inch cookie cutter. Using a flour- ed small thimble, cut a hole in each cookie to one side of centre. Brush cookies with beaten egg white, then sprinkle with colored sugar or "shot", Using a broad, spatula, place on greased cookie sheet. Bake in a moderate oven (350 deg. F.) until light golden around edges. 8 to 10 minutes. Watch carefully as these cookies brown readily. Makes about four dozen 2 -inch cookies or three doz- en 21/2 -inch cookies. Scandinavian Almond Drops 2 egg whites 1/4 teaspoon salt 1/4 teaspoon almond extract 2 cups finely ground, blanched' almonds 34 cup granulated sugar, or 1 1/3 cups icing sugar Candied cherries, orange peel, filberts or walnut halves. In medium-sized bowl beat egg whites slightly with fork. Add salt and almond extract. Combine ground almonds and sugar, then add gradually to egg whites and blend well. Drop small amounts of mixture from teaspoon onto well greased cookie sheets. Decorate tops with candied cherries, orange peel or iluts, pressing lightly into mixture. Bake in moderate oven (350 deg. F.) until golden around edges, 12 to 15 minutes. Makes three dozen "drops".
