Inkster, Toronto, gave the report from the Ontario Honey Producers' Co-operative Ltd., and described changing designs in honey containers. MERRY CHRISTMAS MENU Fresh Fruit Cup Roast Chicken or 'Turkey Nut and Mushroom Bread Stuffing Giblet Gravy Whipped Potatoes Turnips or Squash Sparkling Apple Jelly Mould Cranberry Sauce Relish Tray Mot Crusty Rolls Butter Plum Pudding with Hard Sauce Apple Cider (served throughout) • Mints and Nuts ROAST CHICKEN -.-Most chicken sold in the stores around Christ- mas time are frozen and eviscer- ated. Their average weight being five pounds, one chicken will give approximately six servings. If you are a family of more than four, it's best to buy two chickens. To be sure of a plump, well formed Chicken or turkey, look for a Grade A bird. The grade mark is on a metal tag on the breast of the poultry or on the transparent lith- ographed wrapper. Thaw the bird completely before cooking. This will take approxi- mately eight hours at room tem- perature or a day in the refrig- erator for a five -pound chicken. (The chicken should be cooked within 24 hours after thawing.) Check the cavity of the bird_ for bits of lungs -wash and dry thor- oughly -stuff just before roasting. To roast, place bird* breast side down on a rack in an open roast- ing pan. Cook in a moderately slow oven, 325 deg. F. Allow 30 minutes per pound or approxi- mately 3 hours for a 5 -pound chick- en.
