Canadian, cheese can hold its own in
any market, says one of our• contem-
poraries, and in recent years has forced
. itself to what may even, be called first
place. • In 1863 the first co-operative
cheese facto was st:
Pt
venous to t at 'time cheese was made
withoutany-regular- system, the farmers
dabbled in it each according to his
own lights, the pr duct being largely
a coarse, colorless_icle, the appear-
ance of which hardly inspired con-
fidence among buyers. The standard
of butter turned out by farm dairies
was superior. to that,of cheese. Since
she; advent of factories Canadian cheese
k ` iproved in quality that it has
if enviable place in the world's
This improvement has be n
intermission and, as the
1a bureau points out in a bulletin
tissued, the quality of cheese may,
further improved. Better buildingss
than"rough and ready barns are .neces-
sary for factories 'so that venti:ation
and evenness of temperature' may be
o tained. This is aside .from plant
and milk.
Canadian butter has won no great
name or/particular.place on the market.
Its mediocrity is more surprising than

the same materials at hand, the same
:attention,' the same general plan of
manufacture, our butter should. fare as
wellas our cheese. It is aurprisi'ng
that . creameries are not as numerous
as, cheese/factories, which must be the
case ere our butter will command a'
place' 'in the markets. We have
individual butter makers who may,'
secure 'medals at the Jamaica exhibi-
tion in the face of international com-
petition, but the average is only some
what<better than wretched. So much
of it is poor that our whole butter
product is discredited in ,the markets.
Only by starting creameries and
systematically aiming at a good
standard can proper results be reached.
